A team of experts, with the help of mechanical combs, dedicates themselves with care to this first phase of working. Within a few hours, the olives are brought to the oil mill: weighing, defoliation and washing are the first stages of extraction.

The next process consists in grinding the pulp and the core of the olives to reduce them into a paste which, by “kneading”, is continuously mixed in order to allow the drops of oil to coagulate and be extracted. To preserve the quantity of polyphenols and therefore to guarantee a quality oil, it is necessary to keep the temperature low, and to work in total absence of air. Through the decanter, the paste is separated and the liquid part is conveyed into the separator that, exploiting the centrifugal force, separates the oil from the vegetation water.

Here is the most exciting moment that repays the effort of work: gold that drips and inebriates the view with its bright and brilliant colour; the taste, with aromatic notes that were not forgotten; and the smell, with the unmistakable soft and enveloping scent.

Aristeo
According to Greek mythology, Poseidon and Athena challenged each other on who offered the most useful gift to the people; the first offered the most powerful and rapid horse, while the second offered a new tree: the olive tree. Zeus, king of the gods and judge of the race, had no doubt about what was the most useful gift and awarded the victory to Athena.
If Athena is credited as the one that gave the birth of the first olive tree; Aristeo, also known as the “excellent god”, is responsible for the first cultivation and pressing of olives.
Aristeo, son of Apollo and Cyrene, was the first to graft the olive tree in order to obtain the domestic olive tree, a technique learned from the Myrtle Nymphs, and to extract the oil from it. During his numerous travels, Aristeo spread his knowledge to the entire Mediterranean basin, making olive growing an agricultural practice a symbol of these places.

Organoleptic characteristics
Aristeo is our Organic EVO oil, which keeps its organoleptic characteristics over the years, whose colour turns from yellow to light green.
The main and intense taste of green olive is accompanied by hints of tomato, artichoke and almond; which are followed by the top notes, consisting of a reference to the fresh and traditional herbs of our area.
Bitterness and spiciness are lightly perceived, persistent in the right measure, and do not dominate the main flavour.
